The one with the radishes


Here's a quick and healthy idea for a side dish. It's super easy and perfect when you're in a bit of a hurry. What you'll need:

  • 1 avocado
  • 1 cup of cherry tomatoes
  • 1 cup of radishes
  • 1 tablespoon of chopped cashew nuts
  • 2 tablespoons of good quality olive oil
  • 1 tablespoon of freshly squeezed lemon juice
  • salt and pepper, as much as you like

  2. Oh yum! I would love this one. Nuts are such a delicious way to add protein to a salad. I have been making some tasty ones lately. Today was a curried quinoa salad. I need to blog about some of them!

  7. I *love* this type of salad. I do a similar one with cucumber, I like the idea of throwing in the radish, too.
